  • Cauliflower Alfredo Sauce

    1 head cauliflower cooked til soft.
    about 1 1/2 cups milk. (we use skim)
    2 tbls olive oil
    about 2 cups grated parmesean cheese
    salt, pepper, garlic powder to taste. I used about 1/2 tsp salt, 2 tbls pepper, 1 1/2 tbls garlic powder.

    Mix cauliflower, and 1 cup of milk and olive oil in blender, blend until puree'd, adding more milk slowly as needed for consistency. Add parmesean cheese, and again you can use more or less as needed for personal taste. Add salt (if needed) pepper and garlic powder to taste. The above measurements were for our personal taste, and you can use more or less for yourself as needed. Also you could probably forget the olive oil to make it less fat, but I think it gave it a bit more flavor.

    I used this over grilled chicken breasts, cut them into strips and tossed with some pasta. My kids loved it.
