    Ingredients

    2 eggs
    1 1/2 pounds ground beef
    1 (10 ounce) can Rotel, undrained
    1 sleeve buttery round crackers, crushed
    1 medium onion, chopped
    1 medium bell pepper, chopped
    1 1/2 teaspoons garlic powder
    1 1/2 teaspoons seasoned salt
    1/2 teaspoon ground black pepper
    Dried parsley, to taste
    Parmesan, to taste

    Directions

    1. Preheat oven to 375 degrees.

    2. Beat the eggs in a large mixing bowl, then add the ground beef, Rotel, crushed crackers, onion, bell pepper, garlic powder, seasoned salt, and pepper. Mix until evenly combined. Pack into a 9x5 inch loaf pan. Garnish with dried parsley and parmesan.

    3. Bake for about an hour.
