I have changed these up to not use the apple sauce, but just use more pumpkin. Also the amount of the substitute was for the pure stevia and might not have reflected the correct amount for packets, that was why I listed the full sugar amount...but I would have found that confusing. If you use packets like of Splenda, it would be 119 teaspoons.
Sometimes I add in 1/2 teaspoon of pumpkin pie spice and also just use less flax seed. the result is an 80 calorie muffin. It is not going to be super moist, so I keep them in the freezer and heat one up each time I want one and this seems to work.
